What's the meaning of "Да здравствует?" Literally I know it means "Yes Hello," but I've seen this in both the CCCP Anthem (Да здравствует созданный волей народов) and on a poster depicting Red Oktober (Да здравствует всемирный красный октябрь). Anyone want to dwell in Russian history for me?

it is used in slogans like an exclamation. Like "Gloria!", "Vivat!"...

Yep, "Vivat!"& "Long live!", it's just the same
And don't forget that "здравствуй" comes from the verb "здравствовать" (imperative) - to be well, prosper

"Я здоров" - this will be OK :)
because "здравствовать" - it is an old verb, noone use this word now, except slogans

I remember hearing before that even though it usually isn't, Da can also be used to mean and (though that is a very old, somewhat obsolete meaning for it)

In first case, it would be "Я выздоравливаю", in second - "Я здоров(а)"

Right: щи да каша пища наша. But in the slogan, it's a fixed phrase, "да здравствует", which is based on yet another meaning of "да".

This phrase actually comes from Church-Slavonic.

In C-S, "да" before a verb means "let". So, a literal translation is "let it prosper".
