I have a question on a touchy subject, so sorry for bringing up a potentially offensive topic. It is for academic purposes. I'm writing about racial stereotypes and slurs in Russian. What are the most common names that people apply to Caucasians and Central Asians? I recall hearing черные, чурки, хатчи (spelling?), чебуреки (not sure about this last one).

хачи - Хач (here i'm not sure about spelling cause it's armenian) is an armenian name

Хач is "cross" in Armenian. Also there is professor Хачикян (Khachikyan) in "Mimino" movie, it's common Armenian surname.

"Хач" is a rude (and definitely offensive) contraction of "Хачик" -- a perfectly legal (and not offensive unless used with intent) diminutive of "Хачатур", a stereotypical Armenian name. It properly should be used only as a slur towards Armenians, but is often generalized towards most North Caucasian nation, including Muslim ones.

The Хач spelling is ok, Սուրբ Խաչ is usually spelled as Сурб Хач.

In most everyday cases, however, they are called by nationality, not the race, because they often live (or work) in ethnic groups and everyone around knows who they are and what they do: aзеры, таджики, чечены, даги, грузины etc. Чурки and хачи are offensive words which you don't really use in neutral context. If you for instance want to hire illegal construction workers, you say: надо пойти нанять таджиков, or купить шаурмы у азербайджанцев на вокзале, or приехали чеченцы на двух мерседесах :-) You see, чеченцы are not going to work for food, and таджики don't drive Mercedes, so there is no real use for a common name for such a socially heterogeneous racial group, unless you are a skinhead and going to exterminate them all (or an academic as you are ;-). And if you mistake памирцев for таджиков in an everyday context, there is no big deal.

well er I'd say when people know the nationality for certain, they may use/create an offensive word for this exact nationality. However, if you ask whether people can tell the nationalities one from another and so use the specific offensive word - well some people distinguish different nationalities, some don't... so there are some common words 'suitable' for every such nationality. Well, that's just common sense I think :)

That's what I am talking about. You are not likely to need a single word for two people who are both dark-haired and speak Russian with an accent, but one of them drives by in a smart car, and another one is ready to work for daily food. Not unless you are deliberating on how you hate them all non-Russians and how they are responsible for evil in the world etc. That is where you need the word хачи.
We do differentiate between them, not because we distinguish them by appearance, but because they occupy different niches. Taxi drivers in Moscow are mostly Azeri or Georgians, construction workers and street cleaners are Tadjiks, еtc

Даг - for Daghestani
Чех, чехол - for Chechen. Used commonly by soldiers took part in Chechen wars.
Азер - for Azerbajiani
Чурка, чурек, чурбан, чукмек, чучмек - for Central Asians. Also чебурек is a metonymy for Central Asians - for well-known Caucasian and Central Asian meal, which they commonly sale in Russian fast-foods.

besides all mentioned? Maybe равшаны и джамшуты - it goes from a tv show about stupid construction workes from Central Asia and is used while speaking about construction, building etc.

There is also a nice word "джумшутинг" or "джамшутинг" meaning some ridiculous construction decisions or low quality construction works.

You must understand all the mentioned names are all extremely offensive to these people
