So, I'm in a Level II Russian class in my local community college and we're supposed to write a short little
essay about whatever, as long as we use good Russian. This is my essay: 

То, что я делал

Это было очень весело! Мы - мои братья, сёстры, жена, сын и я - поехали на родео. Мы там были весь день. После родео мы поели, потом поехали домой. Утром, посмотрели Губка Боб Квадратные Штаны. Я больше не хочу смотреть эту передачу! Ну хотя мне нравится Патрик потому что, он очень интересный персонаж, и смешной тоже! Моя любимая русская группа будет в США! Группа слот делает английский альбом, и я не могу ждать.  Я уже услышал их первую песню <<зеркала >>.

My grammar is not perfect but I usually have a good handle on the cases, but I wasn't sure this time around so any mistakes that you find would be helpful. :)

The English version would be like this:

It was a lot of fun! We - my brothers, sisters, wife, son and I - went to the rodeo.  We were there all day. AFter the rodeo, we ate, then went home. In the morning we watched Spongebob Squarepants. I never want to watching that show again. Altought, I do like Patrick, because he's an interesting character, and funny too! Ah, my favorite Russian group will be in the USA!  Slot is making an English album, and I can't wait. I've already heard their first song "Mirrors".

Oh, wow! Thanks so much. There is one thing I forgot to mention though is that I can't use the instrumental case because we haven't covered it in class yet. It's still a few weeks away.

So, since you use the instrumental case here you don't have to make поехал into поехали?

Great job, yoshuac! A few points: после родео (no comma needed) мы ПОЕЛИ (which means ate something, not specified what, while with "съели" you need to specify the food you've eaten), ПОТОМ поехали домой (it's best you keep the verb). Next sentence: instead of "опять никогда" you'd better say "больше": "Я больше не хочу смотреть эту ПЕРЕДАЧУ ("a program" means a channel in Russian). No comma after "хотя". "Нравится" should be without the soft sign, it's third person singular here, not an infinitive. "Интересный персонаж", not "характер" (a character in this sense is "персонаж" in Russian). Two more commas: one after "группа" and the other after "альбом".

The title sounds a bit academic, if you want to be more colloquial, you'd better say something like "Чем я занимался".

While native Russian (like me) can easily understand this, some corrections (underlined) are necessary.

Как я провел вчерашний день. [or "как я провел $time_interval"; hopefully you'll understand this Perl syntax]

Впрочем, мне [что делает?] нравится Патрик - это очень интересный и смешной персонаж. Кстати [just a good introduction word, can be used even if you switch to completely different topic], моя любимая русская группа будет выступать в США! Группа "Слот" [quotes] выпускает [== the group releases] альбом на английском языке и я умираю [or: сгораю] от нетерпения. Oooops... It seems like I've made some misspelling - the word "провёл" has the "ё" (with dieresis) in the middle, not "е" (that's normal for usual text, but is totally inacceptable in a language-learning conference).

It's not that they're confusing to me, but we haven't even see a lot of these words so if I use them I'll have to explain them all to the rest of the class and I'll use up too much time. :/ We haven't even gone over the instrumental case. lol. Tonight we begin the genitive plural. :D

It's not because of the case; it because the subject of the verb "поехать" here is the singular "я" (not "я" plus brothers, sisters, etc). This means the verb has to be in the singular.
