to wonder - to be surprised

I am a little confused about the meaning of the verb удивляться/удивиться.

To which is it closer in meaning: "to wonder" or "to be surprised"? I've seen it both ways but it seems those are rather diverse meanings to attribute to the same verb.

How would a Russian say,
"I was surprised he said that." and
"I wondered what he said"?

Definitely the latter.
"To wonder" will only make some sense in the context "to wonder at".

Actually, also in the context:

- ..., - удивился он ~ - .... - he wondered.

In such context удивился reflects being puzzled, confounded rather than surprised.

That is, the 2nd sentence I'd normally translate as not knowing what was said but being interested in it.

удивляться/удивиться means "to be surprised" or "to be amazed" whereas "to wonder" in this particular example to me is "мне любопытно", "мне интересно".
So I would say:
"I was surprised he said that." = Он меня удивил, сказав это.
"I wondered what he said" = (Мне) стало любопытно, что он сказал. Мне стало интересно, что он сказал.

This is just my opinion.

Я удивлялся тому, что он говорил. = I was amazed at what he was talking about.
Его уже ничто не удивляет. = Nothing surprises him already.
Я был удивлён [тем/тем фактом], что он это сказал. = I was surprised [by the fact that] he said that.
Я был удивлён тем/тому, что он сказал. = I was surprised by/at what he said.
Она не удивилась моему подарку. = She was not surprised at my gift.

"To wonder" is closer to "удивляться" because the verb is "уДИВляться/уДИВиться",
but the subj. is "ДИВо" which exactly means "wonder" or "miracle".

"Какой удивительный закат!" — "What a wonderful sunset!" (Of course you are not surprised about sunset)


But you can also use this word to show you are surprised.

In fact the verb удивляться/удивиться is perfect to use in both examples:
"I was surprised he said that." — "Я удивился, что он сказал это."
"I wondered what he said" — "Я удивился, что он сказал."

To wonder:

1) удивляться (at)
to wonder really, to wonder very much — сильно удивляться

2) интересоваться; размышлять, сомневаться
to wonder about/at a problem — размышлять над какой-л. проблемой
I wonder why they left. — Интересно, почему они ушли.
I really wonder if they'll come. — Мне действительно хотелось бы знать, придут ли они.
He was wondering whether it will rain or not. — Он никак не мог решить, будет дождь или нет.

The meaning of "wonderful" is quite far from "to wonder".
In general, I find your comment wrong and misleading.

"I was surpised" means "Я был удивлен"
"I wondered" means "Мне хотелось знать" ("мне было интересно").
