One more quick question.. 

Can настолько be used as an adverb to describe an adverb? I've seen it used to describe an adjective in this way: 

Он настолько добрый, что он не можеть критиковать своих студентов. 

But can it be used like this?

Мы настолько долго не переписывались, что 

or must you simply say "Мы так долго не переписывались, что" ? Thanks!

I'd say either он настолько (так) добр or он такой добрый. As a rule, you don't mix short and long form of adjectives, it does not work well.

Мы так (настолько) долго не переписывались, что... is fine. However, in oral speech you will probably hear так more often.

Yes - both phrases are good. Only one correction: "Он настолько добрый [short form preferred], что он [no need to repeat the pronoun] не можеть критиковать своих студентов"

The second one ("настолько долго") sounds awkward. I would use "так" instead.
