What is the difference (if any) between преподавать and (на)учить? Do the words have separate functions? And more specifically do they function the same grammatically? I know when using научить the person taught is in the accusative case, and the action being taught is either an infinite verb or noun in dative case, is this also the case for преподавать?

to преподавать it is obligatory to be a teacher
for учить it does not matter

They both can go with 'what' and 'whom' to teach. But usually they function like this:
ПРЕПОДАВАТЬ (что?) - я преподаю русский язык (математику) + (кому? студентам)
(НА)УЧИТЬ (кого? что делать? чему?) - я учу студентов (русскому языку, математике);
я учу студентов читать по-русски, рисовать
Преподавать - has more general meaning, teach a science - then the student will "изучать".
Учить - more concrete (teach to pronounce Russian "R", teach to count total revenue) - the student will "учить".

just from my point of view (everything IMWHO):

преподавать - что or кому - it is about teaching, exactly the same way as teachers do. to teach. usually used to describe work in upper school, high-school or university.

учить - to teach, to learn, to study. if the first one is meant, think of school. not the highschool, just the first 8, maybe 11 classes. compare - Учить-Учитель -> to teach - teacher. if the second or third is meant - think of subject or place. school, univerity in these cases ar both OK.

научить (чему? кого?) - to have told (smth? smbd?), to teach (finished). for example - он научил меня всему, что я знаю - he has told me everything I know. я научу тебя - i will teach (show, tell) you. note, that this form has no present form, only infinitive, past and future - all because of its nature.

научиться (чему?, у кого?)- to have learnt (what, from whom). я научился плавать 2 года назад - i have learnt to swim two years ago.

Учить is more common. U can Учить to everything. To teach your child put clothes on or clean his room. Or teach students.

But Преподавать is more narrow notion. As was said, u have to be a teacher in order to teach.
