This might be an incredibly easy question but I'm feeling kind of stupid today! :) I know how to say "Nice to meet you" but what if I wanted to put it in the past tense?

Let's assume that in the present tense you would say "Приятно познакомиться". The predicate part in this phrase is omitted, and the verb "быть" is implied: "[есть] приятно познакомиться". To put it in past tense you should conjugate the verb "быть": "Было приятно познакомиться", or, to put it in more convenient form, "мне было приятно с вами познакомиться".

"Очень приятно" doesn't really contain any time references. You wouldn't say "было очень приятно" ("it was very nice to meet you"), you would still say "очень приятно". So may be it's the answer to the original question, heh?

In the past I would add "to meet you" (because when you say it in present, it's clear from the context or situation, what is so very pleasant for you) -
Present: Очень приятно!
Past: Было очень приятно познакомиться!
Я был очень рад познакомиться!

What's the problem? "Приятно _было_ тебя увидеть", "приятно _было_ повидаться", "приятно _было_ познакомиться".
