If you want to say someone was standing in the dark, would you say
"Он стоял в мраке," or "Он стоял в темноте"?

Which is more conversational -- 'мрак' or 'темнота'?

first, it is "во мраке"

second, мрак is more poetical, so in everyday speech you would rather say в темноте

you also can use "во мраке" as a jocular point in conversation

And 'мрак' sometimes mean 'total darkness'.

мрак is poetic but it is also used as a jocular exclamation: "shocking!" (probably influenced by the book "12 Chairs").

Можно и так и так, только "он стоял ВО мраке".
