Could we discuss the differences between uses of the propositions "про" and "о" to mean "about"? I've seen them both used in the sense of, "Он писал о работе/Он писал про работу", but I'm unsure of when to use which preposition.

imho про is more colloquial

Would "о" be used with the prepositional, and "про" with the accusative then?

To a certain extent, yes. But the situation can not be described so strictly. You will not make a mistake though if using only "o" in writing.
