"по-" is part for the cases of ongoing activity planned
without it the activity is just to be done.

"Пойдем пообедаем" mean something like "I'm hungry. Let's go for a lunch (right now)" - you're sure that your friend is going to eat today and you're suggesting to do it right now.

"Пойдем обедать?" could be used when you are not sure about your friend's plans, and you're asking him "Are you/we going to lunch today? Maybe right now?"
