Several times in Russian conversation I've wanted to say something like the following:

"I am trying to learn Russian, but it is difficult because there are few speaking opportunities here. I would like to have more speaking practice."

Particularly, I'm looking for equivalents to the phrases "speaking practice" and "opportunities for speaking". I've considered using the phrases "разговорный речь" and "практика" but I suspect that this is not the best way to say it. What's the best way to say this stuff in colloquial Russian?

First of all, речь is feminine, hence разговорнАЯ речь

Second, you might say something like Я учу русский язык, но продвигаюсь медленно. Мне редко выпадают случаи поговорить по-русски. Я бы хотел(а) практиковаться чаще.

I think "разговорная пркатика" is a good equivalent for "speaking practice". "opportunities for speaking" - may be "возможность разговорной практики" ?
e.g.:
"Я пытаюсь изучать Русский, но это сложно, поскольку здесь мало возможностей для разговорной практики. Я хотел бы иметь больше таких возможностей".

This would look fine in writing but it's not colloquial - it is very hard to imagine someone who really speaks in such long and complicated phrases.

Are you really just "trying"?
I'd say: "Я учу русский, но это трудно, потому что не с кем поговорить. Мне бы хотелось побольше практики." It's in colloquial Russian.
But if you are really still just trying then say: "Я пытаюсь учить русский, но это тяжело, потому что не с кем поговорить. Мне бы хотелось побольше практики."
