I am translating this piece and I've come across a few sentences that I believe I have translated correctly but they are causing me some grief.

Полезнее будет, если покрошить чеснок при комнатной температуре и дать ему настояться около 15 минут.

I translated this sentence as... It would be more useful to mince the garlic at room temperature and give it about 15 minutes.

Чеснок может стать причиной несварения, однако многих гораздо больше заботит то, что от чеснока дыхание и пот начинают пахнуть... чесноком. 

Garlic can cause indigestion, but many more are concerned with garlic breath and that sweat will start to smell of… garlic. 

And this last one just.. I am not sure. 

В Италии, Корее и Китае, где еда, щедро приправленная чесноком, похоже, выполняет защитную функцию, потребление чеснока на душу населения составляет от 8 до 12 зубков в день. 

l know it's essentially saying that "In Italy, Korea, and China, where food is liberally seasoned with garlic... the consumption of garlic per capita ranges from 8 to 12 cloves a day. It's the похоже, выполняет защитную функцию that throws me off. 

Any help is greatly appreciated! :)

If you want to be literal here, then it would be "seemingly fulfills the protective function", but that's bad style even in the original.

Starting with the third one: ...where food liberally seasoned with garlic serves, it seems, as a method of protection [against germs], the consumption of garlic per capita ranges from 8 to 12 cloves a day

Second one: I'd either coin a phrase "garlic sweat" or avoid using "garlic breath"

...many more are concerned that after eating garlic their breath and their sweat start to smell of, well, garlic.

And the first one: I think here полезнее is used in the meaning of "better for one's health" as opposed to "useful". I'd say "It would be more effective/beneficial to mince..."

Maybe,
"In Italy, Korea and China, where the food that is liberally seasoned with garlic is probably used as a protection, the daily consumption of garlic reaches (as much as) 8 to 12 cloves per capita. "
It sounds awfully awkward, but so does the original.

In regard to food "Полезнее" may be translated as "more nutritious" or "healthier", or at least “better for you”, definetely not "useful".
So I would translate it as:
It would be healthier to chop garlic in, and let it soak at room temperature for about 15 minutes.

Second sentence:
Garlic can cause indigestion, but many are more concerned with garlic breath and that sweat will start to smell of… garlic.

The 3d sentence:
In Italy, Korea, and China, where food, liberally seasoned with garlic seems to carry protective function, the consumption of garlic per capita ranges from 8 to 12 cloves a day.

That is correct

Зубок чеснока - that is correct,
Зубочек чеснока - rather than "зубчик чеснока" - that depends of size, a small "зубок"
Зубец чеснока - that is not fine,

That is fine to say "долька чеснок" instead of "зубок чеснока".
