Can someone please explain the use of "же" to me?
It seems to me that it is used to emphasize what is being said, but I am still unsure.

Too many functions, in fact! Certanly, emphasis (not necessarily on what has been said). But not only. For instance, too many же's are a clear sign of a thick Southern accent:

Я же ему ж говорила...

Or even:

Я же ж ему ж говорила (this is a parody of course).

If you are not sure, just drop it. It will be OK.

Why not? You can even say "Я же ж ему ж говорила же". Though, being written this looks funny.

if it's Southern it has to start with "та":
Та я же ж ему ж говорила же ж, шо он негодяй.

All Г's must be really soft, Ukrainian-style, of course :))

There is another case of usage: так же, столько же.

столько же: the same amount
там же: the same place
